Harvest Spirits has also greatly expanded its line of spirits to include: Cornelius Applejack, John Henry Single Malt Whiskey, Black Raspberry Core Vodka, Cherry and Peach Applejacks and Rare Pear Brandy. Using these “distressed” apples cuts down on waste and promotes recycling from the Golden Harvest farm. The company’s spirits are typically made using apples that are not pretty enough to sell at its farm stand, but are still perfectly good enough to be used to make liquor. One of the most impressive aspects about Harvest Spirits is its sustainability factor. Core Vodka is apple-based which makes it 100% gluten free. Many conventional vodkas are wheat- or corn- based and are apple-flavored. It takes four gallons or 50 pounds of fresh apples to make just one 750 ml bottle of Core Vodka, but the result is delicious and more natural than conventional store-bought vodkas. Although its spirits have gained widespread popularity, everything is still made at the Golden Harvest Farm in Valatie. Since then, Core vodka has taken off and won multiple awards, becoming a favorite for many throughout the Greater Capital Region. In 2007, Derek Grout, the founder of Harvest Spirits, decided to transform a cold storage room at the farm into a distillery. The Grout family founded Golden Harvest more than 50 years ago, and the family-owned business added Harvest Spirits to its repertoire only recently. One of the distillery’s products is Core Vodka, a liquor that reached the market in 2008 and has been widely hailed and awarded throughout New York State ever since. Harvest Spirits uses fresh produce grown at Golden Harvest and surrounding farms to make small-batch spirits. However, Golden Harvest also has a farm distillery called Harvest Spirits LLC. Golden Harvest, an orchard in Valatie, is most well known for its delicious apples and some of the best cider donuts in the region.
